This is a wrought iron gyuto with 1.2513 core. This steel is similar to Blue1. The core steel 1.2513/TWR is an old steel that has not been manufactured since the 70s. There will be very few of these to come out of the shop. I would not consider this to fall into my workhorse category, I would say this is middleweight. This knife has a Kasumi finish done by myself on Japanese natural stones. Kasumi finishes are not very common among western makers. They take a lot of time, but the end result is absolutely worth it. It also provides an easily thinned knife. This knife has a particularly good kasumi finish. This handle is ancient bog oak that has been carbon dated to 3,000-5,000 years ago. The ferrule is African Blackwood and the spacer is missouri whitetail antler. The handle is D-shaped.
Disclaimer: This wrought iron is extremely old and has large silica deposits in the iron which are naturally occurring and sometimes this results in voids in the iron. This is the nature of old wrought iron and part of what gives it its beauty.
