This is a wrought iron gyuto with 1.2519 core. This steel is similar to aogami #2. This knife has a Kasumi finish done by me on Japanese natural stones. Kasumi finishes are not very common among western makers. They take a lot of time, but the end result is absolutely worth it. It also provides an easily thinned knife. This handle is Missouri spalted pecan and ancient bog oak from Europe.
Disclaimer: This wrought iron is extremely old and has large silica deposits in the iron which are naturally occurring and sometimes this results in small voids in the iron. This is the nature of old wrought iron and part of what gives it its beauty.
