240mm Honyaki Gyuto

775.00

This knife was forged from 1095 spring steel and differentially hardened using clay on the spine and quenching in a commercial quenchant. The knife was then polished and etched, this process makes the hamon very prominent. The 1095 spring steel is very pure with 1.0% carbon and just a touch of manganese to help the hardening process. The edge it takes is very fine. The handle is Bourbon barrel oak and ancient bog oak ferrule.  This knife has a convex grind.

Measurements:
Out of the handle: 3.08mm
Middle: 2.5mm
2cm from tip: 1.45
Weight: 212g
