240x55 S-Grind

575.00

This knife was made from 52100 ball bearing steel. This steel takes a very fine grained edge and has nice retention. This steel has been heat treated to 63/64HRC. One notable quality of 52100 is its relative toughness when compared to other carbon steels at comparable a hardness. This knife has a complex S grind, which is a hollow along the middle of the blade which aids with food release. The handle of this knife is composed of blue/green/turquoise/aquamarine maple burl. If you would like, I could apply a forced patina upon request before shipping.
