240x55 WH Gyuto

725.00

This is a wrought iron gyuto with 1.2519 core. This steel is similar to aogami #2. I would consider this knife to fit into a ‘workhorse’ category. This knife has a Kasumi finish done by myself on Japanese natural stones. Kasumi finishes are not very common among western makers. They take a lot of time, but the end result is absolutely worth it. It also provides an easily thinned knife. This knife has a particularly good kasumi finish. This handle is vintage brown micarta with a carbon fiber ferrule.

Disclaimer: This wrought iron is extremely old and has large silica deposits in the iron which are naturally occurring and sometimes this results in voids in the iron. This is the nature of old wrought iron and part of what gives it its beauty.
