This is a 205mm pattern welded gyuto, the steels used are 1095/15n20. The pattern used for this knife is an intricate mosaic. This is a unique ‘X’ mosaic pattern that I call the Black Crow pattern. This knife has a compound S-grind, which has a hollow along the middle of the blade that aids with food release. The grind on this knife would be my typical of my normal lighter midweight grind. The handle of this knife is composed of low void aerospace grade carbon fiber, the front spacer of the handle is crushed Ws that has been etched deeply so the pattern remains evident. The carbon fiber and ferrule have been heirloom fit.
