This is a wrought iron gyuto with 1.2519 core. This steel is similar to aogami #2. This knife has a Kasumi finish done by myself on Japanese natural stones. Kasumi finishes are not very common among western makers. It also provides an easily thinned knife. The wrought iron polishes extremely well on japanese natural stones. The handle of this knife is composed of a single piece of California Redwood that is nicely figured and chatoyant. This knife would be a perfect candidate for kasumi polishing on Japanese natural stones due to the already stone worked bevels. This knife has a workhorse grind.
