210x49 Spicy Gyuto

$1,050.00

This chef knife was forged from 26c3 steel and 15n20. 26c3 is often compared to the Japanese white steels and referred to as ‘Spicy white’. 15n20 is a steel that is commonly used for industrial sized bandsaw blades. It has a high nickel content which allows it to contrast so bright against the dark 26c3. This was a Ws pattern forged on end and forged out to pull the pattern throughout the length of the blade. The handle is Arizona Ironwood burl and the ferrule is African Blackwood. This knife has a full convex grind thst is done on a rotary platen and. I would consider this to be more of a midweight grind that would be a great all purpose kitchen knife.
