This is a wrought iron gyuto with 26c3 core. The cladding was forged down from antique wagon wheel and then used as cladding. The handle of this knife is a single piece of flame box elder from St. Louis Missouri. The blade geometry was set with stones then finished with sandpaper and lightly etched. After etching I removed most of the oxides with a loose abrasive. I would consider this knife to have a workhorse grind. This knife is suitable for most kitchen tasks.
