This is a wrought iron gyuto with 1.2519 core. This steel is similar to aogami #2. The wrought iron on this knife was sourced from an antique wagon wheel. This blade has forged geometry and the handle is figured Myall from Australia. The bevels have been stone flattened and then etched after polishing. I would consider this more of a workhorse grind and feel.
