This is a pattern welded small 183mm gyuto. The pattern is a multi bar(4) explosion with welded on explosion bolsters. The Cruforge-v and 15n20 was heat treated to an average hardness of 63/64. Cruforgev is a tough steel that takes a nice edge and holds it. This grind is a convex grind for general kitchen use. The handle is western shaped and of spalted maple.
