This is a 250mm pattern welded gyuto, the steels used are CruforgeV/15n20. The pattern for this knife is an intricate feather pattern that has been split in half and not put back together. This is is only half of a billet, the remainder was used for a suji. This knife has a convex edge done on a rotary platen. The grind on this knife would be my typical midweight grind suitable for general kitchen tasks. The handle of this knife is premium yellow cedar burl with an African Blackwood ferrule. The yellow cedar burl has deep character and nice eyes.
