This San mai knife was forged from wrought iron that was sourced from a large piece of wagon wheel with a core of 1.2562. A German tungsten steel with high wear resistance and takes a very keen edge. I’m very happy to be able to offer this as it is very rare in North America(Many thanks to Rocky). The edge bevel have been stone flattened and straightened, it was then sanded and lightly etched to bring out the wrought iron detail. The handle is dyed/stabilized unknown burl that has been dyed black. The handle is oval shape. This knife I would consider to be a normal use grind that is a little thinner than normal, a great general use kitchen knife.
