This San mai was forged from Sheffcut steel and unknown stain resistant steel cladding. This core steel is very similar to 26c3 with added Niobium for added toughness and edge retention. The blade was then polished and etched. The edge this steel takes is very keen. The handle is a single piece of Flame Box Elder. The flame box elder is naturally spalted which is where the reddish pink hues come from. This wood is from Missouri. This knife has a full convex grind which was done on rotary platen. The blade was satin finished then lightly etched to show the cladding. I would consider this to a workhorse grind suitable for general kitchen use.
