220x54 Spicy Redgum

This chef knife was forged from 26c3 steel and 15n20. 26c3 is often compared to the Japanese white steels and referred to as ‘Spicy white’. 15n20 is a steel that is commonly used for industrial sized bandsaw blades. It has a high nickel content which allows it to contrast so bright against the dark 26c3. I forged this steel entirely on my 100 year old power hammer. It was then polished and etched to show the contrasting pattern. The handle is ancient redgum from Australia and a water buffalo ferrule. The handle is oval shaped. This knife has a large hollow ground in above the bevel to help aid in food release. I would consider this to be more of a workhorse grind.
