This mosaic dammy chef knife was forged from 26c3 steel and 15n20. 26c3 is often compared to the Japanese white steels and referred to as ‘Spicy white’. 15n20 is a steel that is commonly used for industrial sized bandsaw blades. It has a high nickel content which allows it to contrast so bright against the dark 26c3. The mosaic refers to the repeating organic pattern that flows down the blade and out of the bolster. The handle is black dyed maple burl with a Missouri whitetail antler ferrule. This knife has a large hollow ground in above the bevel to help aid in food release. I would consider this to be more of my normal grind.
