This is a 290mm pattern welded gyuto, the steels used are CruforgeV/15n20. The pattern used for this knife is a fine laddered Ws pattern. ‘Gyuto’ roughly translates to ‘cow sword’, to me this is the epitome of that. This knife is thick out of the tang and has some weight to it but is well balanced right at the ‘Halcyon‘ makers mark. The grind on this knife would be my typical heavyweight convex grind. The handle of this knife is composed of ancient bog oak from Ukraine and the ferrule piece is African Blackwood.
